Despite popular belief that Caribbean foods are all hot, it has always been our objective to bring out the flavor in foods rather than to overwhelm them with pepper or other spies. With that goal in mind, we have created recipes that are "family oriented" and tasty, but not necessarily hot. For those who like it hot, add our "Mustard Pepper" or "Private Stock", and season to taste.
The recipes in this book represent some of the most popular dishes served in our restaurants over the years. We hope you will enjoy them as much as we do and those who dined at our restaurants did.
