- Whole turkey (in two halves)
- 1/3 cup Lemon Juice
- Hey Mon Private Stock Hot Pepper Sauce
- 1 large onion (pealed & quartered)
- Hey Mon Barbeque Sauce
- Hey Mon Pineapple/Orange Sauce
- 2 stalks celery
- Stewed Cabbage (multi-purpose) Spice
- 1 pr. vinyl gloves
Preheat oven to 375º. Have turkey divided in half, lengthwise (breast to back). Gloves should be worn throughout the entire seasoning process. Wash turkey thoroughly in lemon juice and water. Chop onion into quarters. Separate and place into baking pan. Chop celery into chucky pieces, wash and add to pan. Sprinkle Stewed Cabbage (multi-purpose) Spice, over the onions and celery (Approx 2 tbsp).
Drain and place both turkey halves in baking pan bone side down, over the onions and celery. Begin seasoning with 1 Tbs. per lb. of turkey, Hey Mon Private Stock Hot Pepper Sauce & Stewed Cabbage (multi-purpose) Spice. Rub seasoning evenly all over the exposed side of each the turkey half.
Seal the pan with foil and place in preheated oven for one half of your recommended baking time.
Remove turkey from the oven and remove foil. Place turkey on prepared grill (low to medium heat). Close grill lid and cook for ½ of remaining cooking time. Open Grill lid, and on ½ of turkey brush on 8-12 oz of Hey Mon Barbeque Sauce. Shake the Hey Mon Pineapple/Orange Sauce well, and pour 8-12 oz of the sauce into a medium size bowl. Using a large spoon, pour the sauce on the other half of the turkey. Close lid and continue to grill for the remaining time.
Remove from the grill, place on a platter and carve and serve. Be Sure To Make Plenty, It Will Go Fast!
